This lighter version of enchiladas is not only delicious but really fun to make. Its also a great way to use leftovers. I had some leftover black beans that I made because I was all out of any bean in a can and decided to draw from the dried beans I had collected at the beginning of the pandemic. So here I am with these dried beans and I decided to pressure cook two cups in my Instant Pot and it was a lot. I used some of the beans for tacos and the leftovers I used for this incredible dish.

Why try to make your own when you can buy Sam’s?

The taco seasoning is just perfect - enough depth and spice and the right amount of salt so it is not overwhelming. I bought a few as Christmas gifts!

Above & beyond

Sam went above and beyond her call of duty as a local (San Diego) small business owner. I ordered a few different bottles of spices to bring with me on an overseas trip. And I did not order enough spoons but Sam sprang into action and within days I had the additional spoons I thought I had ordered, with a handwritten personal note in my package.
