In a large saucepan, heat the olive oil over medium heat, add the onions, and cook until translucent, about 3 minutes. Add in the garlic, celery, and carrots and cook until soft and lightly browned, another 2-3 minutes. Add in the 2 tbsp. Healthy On You® Turmeric Ginger SpiceTURMERIC GINGER SPICE and combine well. Then add the vegetable broth and lentils. Cover and cook for 20 minutes until lentils are tender. Remove from heat and puree ½ of the soup using either a blender or immersion blender. Add back in the ½ of the soup and season to taste with salt/pepper if needed and enjoy!
