It's October and officially pumpkin month! In Jamaica, we refer to all squashes as pumpkin so I use the term pumpkin to describe both fruit. I really enjoy using pumpkin in my healthy recipes this time of year. They are great for soups, rice dishes and of course roasted with a little sprinkle of cinnamon. Learning to safely peel and cut your pumpkin into small pieces for use in your recipes is easier than you may think and tastes fresher than the pre-cut versions sold in the super markets.
