This recipe just screams fresh and healthy and that it is! I enjoy a good piece of fish and when I saw these rockfish fillets in the market I had to pick them up. I had just come from the farmer's market and had plenty of fresh vegetables so I decided to make this lovely and easy dish for dinner. I like to use the unbleached parchment paper for this so if you can find it in your grocery store, pick it up. What makes this recipe extra special though is my Healthy On You Fish Lovers Spice blend. It has dill, smoked paprika, lemongrass and garlic which add a delicious smoked flavor to the fish. If you wanted to bake or grill the fish, that would work great too, though I would recommend a fillet with the skin on when grilling.
Preheat oven to 350 degrees. Prepare the parchment paper by tearing a big enough piece that is a little over twice the size of each piece of fish. Wash the fish and pat dry and place in the middle of the parchment paper. Coat each fish lightly with the olive oil. Sprinkle the fish with salt and pepper. Add the vegetables to the top of the fish and then sprinkle with the Fish Lovers Spice. Begin to fold the parchment paper over the fish by holding the sides along the fish and bringing it together in the center. Fold both sides down towards the top of the fish. When the fish is snug in the parchment, tuck the top and bottom pieces under to secure the parchment so it doesn't become loose. Bake for 12-15 minutes until the fish is opaque. Serve hot and enjoy!
