During the hustle and bustle of December which included a trip to Portland and Cabo San Lucas for me, I had great fun hosting a cooking class for eight really fun ladies! We created a festive bulgur and pomegranate salad, my specialty holiday pear punch, dark chocolate and dried fruit bark and really yummy roasted pears. These holiday inspired recipes are tried and tested for their delicious flavors, health value and simplicity. We used seasonal fruit such as pears and pomegranates to create beautiful and festive dishes that work well for entertaining as well as casual meals. I think, judging from the group response that the most surprisingly delicious recipe was the cauliflower cashew soup. With the addition of the cashews it was creamy, flavorful and completely dairy-free! If your trying to reduce your daily calorie intake-this is a good one!
