Wow! So amazing to meet this wonderful group of women and (a man or two) from Equinox Fitness. This class was outside of my normal venue-at Eve Restaurant in Encinitas. The menu was strictly vegan with highly nutritious foods that are easily prepared using a high powered blender.
On the menu was my beet and butternut squash hummus, zucchini pasta with an avocado parsley cream and a lemongrass carrot gazpacho. Learning to add color to your meals to boost the nutrition of the foods we love was key in planning this class. Adding flavor with key spices was another component that makes cooking as delicious and healthy as it should be.
