Super filling, healthy and a weight loss staple. It doesn't have to be fancy looking, just include the elements below and use your own modifications if you need to. Remember that corn is a mostly genetically modified food so only use organic corn grits and always pair it with a vegetable for maximum health benefits.
For the tomatoes:
Preheat your oven to 375 degrees. In a large bowl, add the cherry tomatoes, a drizzle of olive oil, 1 tsp. of the Healthy On You® Herbes de Provence and a sprinkle of sea salt. Add to a medium sized sheet pan and bake for 10 minutes until the skins are split or loosened. Remove from heat, add the roasted garlic to the tomato mixture and set aside.
Melt 1 tbsp. of the vegan butter in a 4-quart saucepan over medium heat. Add the leeks, and stir to coat. Cover and cook until leeks soften, stirring occasionally, about 10 minutes. Add the water and broth, cover, and bring to a boil.
Slowly pour in the polenta, while whisking simultaneously. Whisking is essential, or the cornmeal will clump. As it begins to thicken, stir in the remaining tbsp. butter and 1 cup of the corn. Season with salt and pepper, to taste, and divide the polenta among plates. Add a spoonful of the herbed tomatoes on top, sprinkle the remaining ¼ corn and garnish with micro greens.
