And that we did! We started off this class with the color orange using fresh organic carrots to prepare our Thai inspired carrot gazpacho. It’s so healthy and fresh, everyone loved it-and not just for the amazing taste but from start to finish, this recipe took 15 minutes to prepare. To make it a little more fun, we added fresh lump crabmeat (dressed with parsley, salt and pepper) right on top. I heard cacophony of simultaneous “yums” at the table!
Then we really got down to business-learning how to pick fresh fish and a quick method to make fillets and then debone them using kitchen tweezers. Everyone held their already prepared fillet, scored and seasoned it with ground fennel and grapefruit zest and in the oven it went-very hands on! And that’s what makes these classes not just fun, but actually working in the kitchen to prepare your meal.
For the color pink-we added fresh grapefruit to our cooked fish but not before learning to “supreme” one. Making the clean grapefruit segments took a little practice, but everyone got the idea and it made the presentation beautiful.
The colors green, purple, yellow and red were abundant in our fresh zucchini salad. We used green and yellow zucchini squash, julienned red peppers (all from my garden), chopped purple cabbage and spiralized carrots too. All dressed with an Asian style lime dressing and topped with cilantro. The fresh raw vegetables burst with flavor and it was a perfect accompaniment to the other dishes we prepared.
The last delicious recipe was our most perfect dessert using one of the theme ingredients of the night: lavender. The honey lavender nectarines recipe used fresh in season nectarines and the freshest culinary grade lavender. The nectarines were braised on a griddle then topped with a honey saffron syrup.
After all the preparations, we all sat down together and enjoyed our meal with a nice glass of wine and good conversation. This is where friends are made and vows to keep in touch are made over and over…. Come back soon!
