Another wonderful cooking class last night! Learning to cook healthy should be fun, with good instruction in a comfortable environment among people just like you. You can't help but to have a good time. Our crab cakes were delicious, but ladies, remember to put the mix in the fridge for a few hours before forming the shapes. And using the ice cream scooper really helps to keep the size consistent.
The zucchini blossoms were delightful and so light. This baked version doesn't take away from the usual fried ones but so much healthier. You can purchase these beauties at your local farmer's market. Chino's Farm in Rancho Santa Fe always has them in the summer months. Plan ahead-these would make a delicious and beautiful Memorial Day treat!
Oh, and the summer fruit terrine-raise your hand if you plan on making this gorgeous dessert! I'll be making it several times this summer-the peach sparking wine adds just the right touch. And last but not least, the snow pea salad was unique and refreshing. I hope you enjoyed an new way to eat more of this delicious veggie. The use of purple snow peas really added color and vibrancy which is what you want when planning your menus.
