Healthy On You is at it again! Our latest cooking class was a blast...literally, we blasted reggae music on our break which was unusual, but it was hot in the kitchen so stepping outside to listen to music was welcome.
We started off the class with my recipe for jerk shrimp tacos with beets and fennel. We marinated the shrimp in my sassy jerk seasoning, then topped the mini tortillas with my special taco jerk sauce recipe, then added the beets and fennel. The flavor combination was an explosion beyond words.
Next we prepared our jerk shrimp recipe. We started by preparing the jerk marinade. Jerk chicken is always best when you marinade the chicken ahead of time so it's important to start early to get the best flavors. Out of the refrigerator came the marinated version which we cooked the fast method: cooking int he oven for 20 minutes prior to grilling outside. This gave us another opportunity to be outside in the cooler evening air.
Ahead of time I prepared the rice and peas dish pictured int he photos-a traditional Jamaican recipe that pairs beautifully with jerk chicken. The kale salad was also another taste explosion and we finished off the meal with our honey roasted pineapples.
Really fun evening with a good group of ladies...and by the way, loving the influx of men wanting learn healthy cooking and eating!
