Quinoa Stuffed Butternut Squash

We just can’t get enough of Butternut squash these days and as fall begins to set in look no further for great recipes with our flavorful spice blends.

Case in point: this deliciously festive stuffed butternut squash. We used the same filling for these as the Zucchini Love Boat recipe, because if it ain’t broke, why fix it? Or something like that anyway! This filling is very versatile and healthy feeling, and it’s great on its own too. It’s filled with savory roasted mushrooms and Impossible Burger meat which is 100% plant-based. You can always omit the vegan meat substitute and pair the finished recipe with baked chicken or fish.
