Oven Roasted White Fish with Cherry Tomatoes

Talk about an easy meal that is packed with flavor! This fish dish is just that! With a total cook time coming in at around 30 minutes, you can whip up this dish on a busy night or for a relaxed weekend date night. In short, it’s the perfect dish for every occasion and you won’t regret it.

Besides being easy, this meal is bursting with flavor thanks to two Healthy On You® spice blends. In this recipe the star is our Fish You Were Here spice blend, but it is complemented by the herby-ness of our Provence You’ve Been Gone. Everything comes together in the perfect bite with the tenderness of the white fish and juiciness of the cherry tomatoes.   1. Heat the oven to 400 degrees. Place the tomatoes, shallots and garlic in a 9-by-13-inch nonreactive baking dish. Season with Provence You’ve Been Gone.
  2. In a small bowl, whisk together the olive oil, vinegar, honey, salt and pepper.
  3. Pour liquid mixture over the tomatoes and toss to combine. Transfer to oven and roast until the tomatoes have collapsed and the shallots are translucent, about 15 minutes.
  4. While the tomatoes roast, pat the fish dry with paper towels, brush all over with olive oil, and season generously with Fish You Were Here, salt and pepper.
  5. Remove dish from oven. Toss the tomatoes, move them to the sides of the dish and place the fish fillets, evenly spaced, in the center. Roast until the fish is cooked through and flakes easily with a fork, about 10 to 12 minutes.
  6. Sprinkle the entire dish with the lemon zest, basil and mint. Serve the fish with the tomatoes, spooning any remaining juices on top. Enjoy!
